Nick’s CV and past experience speaks for itself. As well as spending time as head chef at Daphne’s in Barbados – the sister restaurant to the famous Daphne’s of Chelsea, London – Nick has cooked with London’s most fêted Italian chef, Giorgio Locatelli, at both the Michelin-starred Zafferano and Cecconi’s in Mayfair – where he was head chef. More recently he worked as a chef at the critically acclaimed hot-spot of the moment, Bocca di Lupo in Soho.

Design… From the demarcation in the foyer of the original race track’s “Solomon Straight” which rolls out before you in riven quartz and honed granite, to the glittering “honeycomb” 1930’s inspired pendants behind reception, it is clear that the interior design observes and is influenced by detail typical of the period and by those who were prolific and influential of style at the time. The spirit and history so relevant to the site has been carefully woven into the developing story of the new Brooklands Hotel. For example Eileen Gray, Van de Rohe, & Le Corbusier each has established and identifiable details so frequently used in their iconic pieces. The button detail apparent to the Barcelona chair has been adapted and exaggerated to create impressive leather wall panels to the back of the reception desk, this over sizing of detail is also an influence in the design of the display unit to the rear of reception taking inspiration from the “rocket” cabinet so recognisable of the art deco period.
Art… Bespoke art, much of which is inspired by influences of an earlier era, is visible in all key areas of the hotel. Even the centre piece wood sculpture which is suspended high above in the atrium of the hotel lobby, and which has been created exclusively for the hotel by up-and-coming designer Charlie Whinney (V&A, Harvey Nichols and the Dorchester are some of his most recent high-profile clients) has been heavily been influenced by the motor-racing setting. A sculptural and interpretive 3D map of the old Brooklands Race Track, as it appeared in the 1950’s, it depicts the flowing lines and competition of motor racing in a new way – depicting the route of the cars as several strands racing each other, twisting and flowing as they jostle for position on the track.
